Soil: calcareous-clayey, ventilated, significant day/night temperature range
Manual harvesting, soft pressing, refermentation in bottle, more than 18 months on yeasts
Tasting notes:
Bright straw yellow color, fine and persistent perlage. Elegant perfume: citrus peel, white flowers, bread crust, hazelnut. On the palate it is fresh, vertical, salty, creamy bubbles, fine structure, acid balance/ depth. Long finish, clear, with mineral and citrus returns.
Technical data: Dosage 3 g/l, Alc. 12%, contains sulphites
