In Maiolati Spontini, at our winery,

vinification follows a respectful approach aimed at enhancing the character of Verdicchio and the terroir of the Castelli di Jesi.

The grapes are vinified mainly in stainless steel tanks to preserve freshness, aromatic precision, and varietal identity. For selected wines, we also use concrete, a vessel that allows us to highlight the most authentic and traditional expressions of Verdicchio while maintaining purity and balance.

Oak is not used for the ageing of still wines, but only for the creation of the liqueur d’expédition for our Metodo Classico and for specific multi-vintage blends, where its role is purely technical and balancing.

The entire process is guided by a philosophy of minimal intervention, allowing the terroir to speak through the wine: each micro-zone, each vintage, and every nuance is respected and carefully guided.
